Recipe: Coconut Chia Pudding
Today’s recipe is brought to you by the letter C – for constipation. If you’re a parent whose child is having problems going in the bathroom, perhaps try chia seeds.
Tricia Williams is executive chef, nutrition educator, culinary nutritionist & founder of Food Matters NYC. She offers this healthy tip for Coconut Chia Pudding. I haven’t tried chia yet and plan to go to the local health food store to try it.
Coconut Chia Pudding

Yields: 4 Servings
2 cups coconut milk
½ cup chia seeds
1 tablespoon maple syrup
Place chia seeds, coconut milk and maple syrup in a bowl. Whisk until thoroughly combined. Allow mixture to sit out at room temperature to allow chia seeds to bloom. Place mixture in an airtight container and refrigerate. Serve well chilled.
